Satv Dairy

Dr. Monika Banger went looking for the food of her childhood (freshly churned white makhan, fermented buttermilk, bilona ghee) and couldn’t find it anywhere in Gurgaon, even while willing to pay for it. The answer turned up at a lunch table, in homemade curd made by her colleague Narender Jhangu’s mother, Mrs. Murti Devi, which tasted exactly like her grandmother’s. Murti Devi had raised two sons on farming and decades of selling A2 milk and bilona ghee, and the two women became co-founders of Satv Dairy, built to preserve old food rather than invent new ones. Milk comes from Gir, Sahiwal and Haryana cows raised on the brand’s own farm, and the hero bilona ghee is made the slow way: curd set, hand-churned with a wooden bilona into makhan, then cooked low and slow. The range extends to A2 paneer, a Full Moon ghee made during Purnima, gluten-free laddus, millet cookies and wood-pressed oils, all free of preservatives and backed by ISO 22000, HACCP and GMP certifications, with 14+ stores across Delhi NCR. For anyone abroad who grew up on a grandmother’s curd and wants their kids to taste the real thing, this is the jar to reach for.
