{"id":383558,"date":"2024-11-10T13:17:13","date_gmt":"2024-11-10T21:17:13","guid":{"rendered":"https:\/\/beedvine.com\/?p=383558"},"modified":"2025-01-21T11:15:14","modified_gmt":"2025-01-21T19:15:14","slug":"bordeaux-wine-sweet-semi-sweet-wine-guide","status":"publish","type":"post","link":"https:\/\/beedvine.com\/bordeaux-wine-sweet-semi-sweet-wine-guide\/","title":{"rendered":"Bordeaux Wine: Sweet &#038; Semi Sweet Wine Guide"},"content":{"rendered":"<p style=\"font-weight: 400;\">Bordeaux wines are one of the most expensive and invested-in wine regions in the world.<\/p>\n<p style=\"font-weight: 400;\">Sweet wines from Bordeaux have been genericized to \u2018Sauternes,\u2019 although they come from 10 different appellations in the Bordeaux region all around the river Garonne. Sauternes is but one \u2013 one of the southernmost village as seen on the map below.<\/p>\n<p style=\"font-weight: 400;\">As noted in our Sweet Wine\u00a0<a href=\"https:\/\/beedvine.com\/sweet-wine-semi-sweet-wine-worldwide-an-introduction\/\">introductory post<\/a>,\u00a0Bordeaux\u2019s sweet wine production has fallen drastically since WWII when it was 32% but now stands at just around 1% of all wine produced.<\/p>\n<p style=\"font-weight: 400;\">There are 10 sweet wine appellations in Bordeaux making dessert wine (semi-sweet wines called\u00a0<em>moelleux<\/em>\u00a0are produced in the wider region outside of the 10 villages designated below). The most well-known are sweet wines of Sauternes, Barsac &amp; Cerons.\u00a0 Sauternes &amp; Barsac contribute about 2\/3 of the planted area of the 3,300 hectares (note that Barsac can use the Sauternes appellation).<\/p>\n<p style=\"font-weight: 400;\">The other villages are interesting to explore and since they are less known, one can get better value on purchase \u2013 however keep in mind that the maximum allowed yields per hectare can be up to double than that of Sauternes &amp; Barsac \u2013 thereby impacting quality.<\/p>\n<div style=\"width: 1290px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.bordeauxblanc.com\/sites\/default\/files\/2019-03\/map-2.png\" alt=\"Bordeaux Sweet Wine Appellations Map\" width=\"1280\" height=\"705\" \/><p class=\"wp-caption-text\">Bordeaux Sweet Wine Appellations Map<\/p><\/div>\n<p style=\"font-weight: 400;\">Map from\u00a0<a href=\"https:\/\/www.bordeauxblanc.com\/\">Bordeaux Blanc<\/a><\/p>\n<ul style=\"font-weight: 400;\">\n<li>Sauternes<\/li>\n<li>Barsac<\/li>\n<li>Bordeaux Sup\u00e9rieur<\/li>\n<li>Cadillac<\/li>\n<li>C\u00e9rons<\/li>\n<li>C\u00f4tes de Bordeaux-Saint-Macaire<\/li>\n<li>Graves Sup\u00e9rieurs<\/li>\n<li>Loupiac<\/li>\n<li>Premi\u00e8res C\u00f4tes de Bordeaux<\/li>\n<li>Sainte-Croix-du-Mont<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p style=\"font-weight: 400;\"><u>Styles of Sweet &amp; Semi-Sweet Bordeaux Wine<br \/>\n<\/u><em>Sweet Wine<br \/>\n<\/em>A\u00a0<em>liquoreux<\/em>\u00a0style \u2013 this is what most people associate sweet \/ dessert wines with Bordeaux, the viscous and the sweeter style. They are more concentrated, always made from botrytis affected grapes, as discussed in the\u00a0<a href=\"https:\/\/beedvine.com\/sweet-wine-semi-sweet-wine-worldwide-an-introduction\/\">\u2018Note on Botrytis\u2019 section of our introductory sweet wine post.<\/a>\u00a0Sweet wines can age exceptionally well, and an ultra-premium Sauternes is typically not consumed before at least 20 years of aging.<\/p>\n<p style=\"font-weight: 400;\"><em>Semi-Sweet Wine<br \/>\n<\/em>Known as\u00a0<em>moelleux<\/em>\u00a0\u2013 these are semi-sweet wines with their own AOC and cover the entire Bordeaux region (outside of the 10 villages making sweet wine). Here fermentation is stopped through various methods when the sweetness level desired is reached, killing off the yeast before consuming all the sugar so that some is left in the wine. The sweetness level of\u00a0<em>moelleux\u00a0<\/em>is similar to our Bee d\u2019Vine honey wine\u00a0<a href=\"https:\/\/beedvine.com\/product\/demi-sec-semi-sweet-beedvine-mead-honey-wine\/\">Demi Sec still<\/a>\u00a0or\u00a0<a href=\"https:\/\/beedvine.com\/product\/demi-sec-semi-sparkling-sweet-beedvine-mead-honey-wine\/\">Demi Sec sparkling.<\/a><\/p>\n<p>&nbsp;<\/p>\n<p style=\"font-weight: 400;\"><u>Taste and Serving (Sweet Style)<br \/>\n<\/u>Sauternes are oaked, they have an acid backbone and are very sweet (120-160 Grams per liter of sugar) but not as sweet or acidic or as say a Hungarian Tokai or the various German sweet wines \u2013 look out for those in future blog posts. You can expect an alcohol percentage of generally between 12-14% for sweet Bordeaux.<\/p>\n<p style=\"font-weight: 400;\">However, they are more alcoholic, which adds to the sensation of weight or viscosity. As a rule, sweet Bordeaux wines are affected by botrytis and the blend is typically S\u00e9millon 75-80% Sauvignon Blanc 15-20% and about 5% Muscadelle.<\/p>\n<p style=\"font-weight: 400;\">One can serve a Sauternes wine as a luxurious dessert by itself and experience notes of butterscotch, apricot, and honey arguably with greater impact than if accompanied with a dessert dish. Of course, one classic combination could be hard or blue cheeses whose sharp and salty flavors will balance the sweetness of the wine.<\/p>\n<p>&nbsp;<\/p>\n<p style=\"font-weight: 400;\"><u>Production<br \/>\n<\/u>Chateau d\u2019Yquem, the pioneer of Bordeaux sweet wine, mentioned the word sweet wine \u2018moelleux\u2019 in 1816 and \u2018triage\u2019 in 1810. Moelleux is the French word for sweet wine, and triage refers to the practice of multiple rounds of hand harvesting only the clusters affected by botrytis or noble rot (and not the whole vine) \u2013 a time intensive practice!<\/p>\n<p style=\"font-weight: 400;\">The triage, or tries, can range from 3 times up to and more than 10 \u2013 sometimes one berry at a time!<\/p>\n<p style=\"font-weight: 400;\">In Bordeaux the maximum production allowed is 25 hectoliters per hectare, but the finest sweet wine chateaux produce in the range 9-15 hectoliters per hectare.<\/p>\n<p style=\"font-weight: 400;\">Relative to the sweet wine regions of Germany, the other ultra-sweet heavyweight of Europe, Bordeaux is a small region so there is more consistency, but the unpredictable seaboard facing climate in Bordeaux increases vintage variation (which they would say is a good thing!). There is however a stronger risk of hail and storms due to the later harvest extending to even the end of November.<\/p>\n<div style=\"width: 1510px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" class=\"sFlh5c FyHeAf iPVvYb\" src=\"https:\/\/www.sodivin.com\/28761-product_zoom\/yquem-d-1921.jpg\" alt=\"Ch\u00e2teau d'Yquem 1921 Sauternes\" width=\"1500\" height=\"2250\" aria-hidden=\"false\" \/><p class=\"wp-caption-text\">Ch\u00e2teau d&#8217;Yquem 1921 Sauternes (~$12,000)<\/p><\/div>\n<p>&nbsp;<\/p>\n<p style=\"font-weight: 400;\"><u>Sweet &amp; Semi-Sweet Bordeaux Wine Recommendations<br \/>\n<\/u>Chateau d\u2019Yquem was mentioned by Thomas Jefferson in 1787.
